Turkish bread or PIDE

Pide or Turkish bread is a delicious bread that I often bought in the Netherlands. Here in Spain I haven’t been able to find it yet. So I learned to bake it myself. Thought it was very complicated, but it wasn’t that bad. Just as tasty in the wholemeal version!

The shiny layer on this turkish bread is formed by coating the dough with egg yolk before it goes into the oven. Then sprinkle delicious black sesame seeds on top and you feel like you’re on the streets of Istanbul.

Turkish bread or PIDE

In the Netherlands I regularly bought Turkish bread at the Turkish bakery. Here in Spain I haven't been able to find it yet so I learned to bake it myself. It sounds complicated but it is actually very simple and quick to do. Just try!!

Ingrediënten

  • 450 g flour
  • 250 ml tepid water
  • 10 g fresh yeast
  • 10 g aceite de oliva
  • 10 g sugar
  • 10 g salt
  • 50 ml milk (plantbased)
  • 1 egg

Instructies

  • Combine the water, fresh yeast and sugar and let it sit for 10 minutes. Foam will then form on the water so that you can see that the yeast has been activated.
  • Mix the flour and yeast mixture and knead lightly. Then add the salt. Salt reduces the action of the yeast, which is why it is more convenient to add it later. Now knead the mixture until it feels elastic. The dough will still feel a bit moist, that's no problem.
  • Place the dough in a bowl and cover with a tea towel or plastic wrap. Place the bowl in a warm draft-free place for the first rise of about 60 minutes. The dough will now double in volume.
  • Sprinkle a flat baking tray with some flour and place the dough ball in it. Press completely flat with your hands until the bread is 4-5 cm thick. Cover the dish with foil or tea towel and let rise again for 30 minutes.
  • Preheat the oven to 230 degrees. If you have an oven stone (or floor tile), place it in the oven immediately while preheating.
  • Remove the tea towel or foil from the dough and press lines into the dough with your fingers until you get a diamond pattern. Mix the egg with the milk and stir to a smooth paste. Brush the dough with the egg mixture and sprinkle with the sesame seeds.
  • If you have an oven stone, bake the bread directly on the stone. If you don't have one, put the baking tray in the oven. Baking will then take a little longer.
  • Now lower the oven temperature to 210 degrees and bake the bread for 15-20 minutes until golden brown. Let cool slightly, cut into pieces and serve.
