This delicious bread goes well with a soup, or on the serving board.

Ingrediënten

  • 500 gr all purpose flour
  • 7 gr dry yeast or 25 grams fresh yeast
  • 1,5 tsp salt
  • 1 tsp sugar
  • 3 tbsp vegetable oil
  • 300 ml water or (soy) milk, or you take half of both
  • 2 tsp dried oregano
  • 2 tsp dried rosemary
  • 1 tsp dried thyme
  • 50 gr black olives, pitted and sliced
  • 2 twigs fresh rosemary
  • 1 tbsp drained jalapeno peppers from a jar (optional)

Instructies

  • Heat the water or milk until it is lukewarm.
  • Add the fresh yeast to the heated water/milk with the sugar and mix well. Put a tea towel over it and let it sit for 15 minutes until it has a decent foam hat. If you have a stone countertop, place a wooden board under it so that the liquid doesn't cool down too quickly.
  • In a mixing bowl, mix the flour with the herbs and then add the yeast. Knead this mixture for a few minutes.
  • When the mixture is combined, add the salt and oil. Yeast does not tolerate salt well, which is why the salt is added later.
  • Mix it with a food processor with dough hook or knead by hand on a floured work surface. The dough should feel smooth and dry. Put a little oil in a clean bowl and put the dough in it, cover with a damp tea towel and put it in a warm place to rise. This will take about an hour.
  • When the dough has doubled in volume, you can take it out of the bowl and knead it again. This doesn't take long, just enough to get the air out.
  • Line a baking pan (rectangular or round, whichever you prefer) with baking paper. Put the dough in the form and make sure it is even thick all over. Brush the top with water and press the pieces of olives, rosemary and jalapeño peppers on top.
  • Now is the time to turn on and preheat the oven. Place the damp tea towel over the bread again and let it rise for 15 minutes.
  • Place the bread in the oven and bake for about 40 minutes.
  • Remove the baking pan from the oven and check if the bread is cooked. You can do this as follows: Knock on the bottom and it sounds hollow, then the bread is ready. If it is still a bit soft, leave it in the oven for a few more minutes. Possibly vice versa.
