Porties: 4 baguettes

For the baguettes

  • 500 gr flour: white or whole wheat flour
  • 7 gr dry yeast or 25 grams of fresh yeast
  • 1,5 tsp salt
  • 1 tsp sugar
  • 3 tbsp vegetable oil
  • 300 ml water or (soy) milk. Or you take half of both

Cheese olive bread

Dried tomatoes with oregano

  • 3 dried tomatoes in pieces
  • 1 tbsp oregano

  • Heat the water or milk until it is lukewarm.
  • Add the fresh yeast to the heated water/milk with the sugar and mix well. Put a tea towel over it and let it sit for 15 minutes until it has a decent foam hat. If you have a stone countertop, put a wooden board under it so that the liquid doesn't cool down too quickly.
  • Mix the flour with the yeast in a mixing bowl and knead this mixture.
  • When the mixture is combined, add the salt and oil. Yeast does not tolerate salt well, which is why the salt is added later.
  • Mix it with a food processor with dough hook or knead by hand on a floured work surface. The dough should feel smooth and dry. Put a little oil in a clean bowl and put the dough in it, cover it with a damp tea towel and put it in a warm place to rise. This takes about an hour.
  • When the dough has doubled in volume, you can take it out of the bowl and knead it again. This doesn't take long, just enough to get the air out.
  • Divide the dough into equal pieces. Now is the time to fill the dough if you wish:. Make sure the olives and dried tomatoes are well dried with kitchen paper. Mix part of the dough with the dried tomatoes and oregano or choose the combination of cheese and olives. Knead the ingredients well into the dough.
Roll each piece into a baguette.
  • Place the dough in a baguette tray or on a baking tray. Now is the time to turn on the oven and preheat it. Place the damp tea towel over the baguettes again and let rise for another 15 minutes.
  • Place the baguette in the oven and bake for about 15 minutes.
  • Remove the baking pan from the oven and check if the bread is cooked. You can do this as follows: Knock on the bottom and it sounds hollow, then the bread is ready. If it's still soft, leave it in the oven for a few more minutes.
