A delicious soup made with cannellini beans and leeks. Quick and easy! Cannellini beans are good for you! There are healthy carbohydrates and proteins in all types of beans. As well as lots of vitamins and minerals.
Cannellini beans are Italian beans and have a slightly nutty flavour. You can buy them in tins, so they are ready to use, or you can buy them dried. The disadvantage of dried beans is that you have to soak them for hours beforehand. That’s why we didn’t really eat enough of them. However, we have now discovered that you can do a quick soak. Put the beans in a little water, bring to boil and leave to cook for 5 minutes. Then turn off the heat and leave the beans to soak in the water for about an hour. Then treat them as if they had been soaked, so just cook them. And if you don’t have time or don’t feel like it, just buy them in a jar!

Cannellini bean soup with leeks
Ingrediënten
- 1 medium white onion
- 3 cloves garlic
- 250 g cannelinibeans from a can
- 4 medium leeks
- 2 bay leaves
- 2 teaspoons oregano
- 1 handfull parsley
- 1,5 liter vegetable stock
- olive oil, salt, pepper
Instructies
- Saute the chopped onion in the olive oil for a few minutes. Add the finely chopped garlic and simmer for a few more minutes.
- Rinse the beans and finely chop the leek. Add to the garlic-onion mixture and stir well.
- Add the bay leaves and oregano.
- Add the vegetable stock and let it cook for another 10 minutes. The leeks may still be a bit crunchy.
- Serve with a drizzle of spicy chili oil.
