Hearty zucchini soup, delicious for lunch or as an appetizer with dinner.

  • 2 courgettes
  • 2 shallots
  • 2 table spoons fresh thyme
  • 1 liter vegetable stock


  • Fry the finely chopped onion or shallots in a little olive oil. Add the courgette pieces and the thyme and stir to combine.
  • Add the vegetable stock and bring to a boil. Let it cook for 10 minutes until the zucchini are completely cooked.
  • Puree the soup with an immersion blender or in a blender.
