Soup from chestnuts? We never tasted it but read about it on the internet. So we started trying it out and we loved the nutty flavor of it. We experimented with the flavors, added sage and decided to publish the recipe. Delicious.







Chestnut soup

There are two types of chestnuts. Wild and sweet. You can roast sweet chestnuts, but you can also make soup from them, for example. We did that and it is very nice. It is mainly an autumn and winter soup. A surprising appetizer.

Ingrediënten

  • 250 gr peeled sweet chestnuts, cut into pieces
  • 10 leaves fresh sage
  • 1/2 white onion, finely chopped
  • 1 liter vegetable stock
  • olive oil, pepper, salt

Instructies

  • Saute the onion in a little olive oil. Add 6 leaves of sage and let it cook for a few minutes.
  • Now add the sliced ​​chestnuts, stir well and add the vegetable stock. Reserve a handful of chestnuts for garnish.
  • Let the soup cook for 10 minutes.
  • Blend the soup completely and season with salt and pepper.
  • Now fry 4 sage leaves in hot olive oil until they are dark green and crispy.
  • Ladle the soup into bowls, garnish with a tablespoon of chestnut pieces and a fried sage leaf.
