Peasoup with thyme

Here is another easy and delicious recipe. This fresh pea soup with thyme is great for summer. Especially when it is hot outside.

We have tried a simple recipe that tastes similar to the winter pea soup but takes only five minutes to prepare. This recipe gives you the chance to make something really delicious, but fast. It only takes 5 ingredients that you probably already have at home and it takes 25 minutes to cook.

We like to serve this light soup for lunch or as a starter for dinner. Of course, there is nothing to stop you from making this pea soup in the winter too.

This vegan soup is also a big hit with the kids.

 

In this soup, we used frozen peas, which many households have in the freezer. The thyme can be fresh or dried. Both are very tasty. You only need a stick blender. If you don’t have one at home, you might want to buy one, as this is one of the most used items in kitchens.

 

If you make a bigger pot of this light soup, you’ll have something to eat the next day, or you can put it in the freezer for those occasions when you don’t have time to cook but still want something healthy. Enjoy!

  • 1 food processor

Ingrediënten

  • 2 tablespoons of olive oil
  • 3 shallots
  • 3 sprigs of fresh thyme
  • 1 litre of vegetable stock
  • 500 g of frozen peas
  • pepper, salt

Instructies

  • Fry the finely chopped shallots in the olive oil.
  • Add the fresh thyme and peas and stir well.
  • Now add the vegetable stock and simmer for 10 minutes.
  • Remove a few spoonfuls of peas and blend the rest of the soup very finely.
  • Serve and garnish with the peas not blended.
