Spicy carrot soup

A spicy carrot soup with ginger. Delicious, easy to make and healthy.

  • 500 gr carrots
  • 2 cm ginger root
  • 2 shallots
  • 150 ml coconut milk
  • 1 tbsp coconut oil
  • 1 handful flat-leaf parsley
  • 2 cubes for vegetable stock or 1 liter vegetable stock


  • Chop the shallots and ginger.
  • Peel the carrots and cut them into small cubes.
  • Heat the coconut oil in a soup pot.
  • Saute the shallots and ginger over low heat for 5 minutes.
  • Add the carrot cubes to the shallots and ginger.
  • Add the vegetable stock.
  • Bring to a boil and cook for 20 minutes (until carrots are tender).
  • Pour the soup into the blender, add the coconut milk and blend until a fine soup remains.
  • Taste and season even more with salt and pepper if necessary.
  • Ladle the soup and sprinkle a handful of parsley over it.
