Lentilsoup with a bite

This delicious lentil soup has a bite. Firstly, because of the fair amount of peppers that go into it. Secondly, because the added carrots, leeks and peppers are not cooked all the way through so they still have a bite. Eat it as a meal soup or diluted as an appetiser.

Lentilsoup with a bite

We gave this lentil soup quite a bite by adding 2 chilli peppers. This is of course optional.

Ingrediënten

  • 300 g raw brown lentils
  • 3 cloves of garlic
  • 2 Chili peppers
  • 1 big red onion
  • 1 red bellpepper
  • 1 leek
  • 2 medium carrots
  • 1,5 litr vegetable broth
  • olive oil, pepper, salt

Instructies

  • Wash and rinse the lentils several times in cold water.
  • Fry the chopped onion in a dash of olive oil. After a few minutes, add the finely chopped garlic.
  • Chop the chilli peppers. Don't like spicy? Then remove the seeds. Add the chillies to the onion-garlic mixture and stir well.
  • Now add the lentils and a litre of the vegetable stock. Bring to the boil and simmer gently for 20 minutes.
  • Meanwhile, cut the peppers, leeks and carrots into small pieces. It is a hearty soup so there is no need to chop it very finely.
  • Add the chopped vegetables to the lentil soup and continue cooking until all vegetables are tender. If the soup becomes too thick, add some more vegetable stock.
  • Season to taste with salt and pepper.
