We often just fry an egg or make the scrambled tofu with an Indonesian meal, but these eggs in spicy sauce are a new favorite.

Ingrediënten

  • 8 eggs
  • 2 medium white onions
  • 2 cloves of garlic
  • 1 teaspoon laos (optional)
  • 1/2 tablespoon brown sugar
  • 2 leaves of djeroek poeroet (optional)
  • 200 ml diced tomatoes from a jar
  • 100 ml coconut milk
  • 1/2 cube of vegetable stock
  • 1 tablespoon sweet soy sauce
  • 3 tablespoons water
  • sunflower oil, pepper, salt

Instructies

  • Hard boil the eggs. We put them in boiling water and boiled them for 8 minutes.
  • Crush the onions, garlic, galangal and sugar into a bumbu.
  • Heat 2 tablespoons of sunflower oil and fry the bumbu. If you use them, add the djeroek purut leaves. Simmer for a few minutes until the onions and garlic are tender.
  • Now add the diced tomatoes, coconut milk and soy sauce and heat through.
