Indonesian eggs in spicy sauce
We often just fry an egg or make the scrambled tofu with an Indonesian meal, but these eggs in spicy sauce are a new favorite.

Ingrediënten
- 8 eggs
- 2 medium white onions
- 2 cloves of garlic
- 1 teaspoon laos (optional)
- 1/2 tablespoon brown sugar
- 2 leaves of djeroek poeroet (optional)
- 200 ml diced tomatoes from a jar
- 100 ml coconut milk
- 1/2 cube of vegetable stock
- 1 tablespoon sweet soy sauce
- 3 tablespoons water
- sunflower oil, pepper, salt
Instructies
- Hard boil the eggs. We put them in boiling water and boiled them for 8 minutes.
- Crush the onions, garlic, galangal and sugar into a bumbu.
- Heat 2 tablespoons of sunflower oil and fry the bumbu. If you use them, add the djeroek purut leaves. Simmer for a few minutes until the onions and garlic are tender.
- Now add the diced tomatoes, coconut milk and soy sauce and heat through.
