Fried cauliflower rice (Vegan)

We regularly take it upon ourselves to eat a little less, eat a little less calories and a little less carbohydrates. But of course we always want to eat very tasty. For example, we came up with the idea to replace the rice of our fried rice with cauliflower rice. Just as tasty, much less carbohydrates. And we were surprised by the extra crispiness of the cauliflower, which makes it even more delicious.

Fried cauliflower rice (Vegan)

You prepare this fried cauliflower rice exactly the same as regular fried rice. Only you use very finely chopped cauliflower instead of rice. Less carbohydrates and a lot crispier than the traditional fried rice.

Ingrediënten

Fried cauliflower rice

  • 1/2 cauliflower
  • 1 carrot
  • 1/4 white cabbage
  • 1 thin leek
  • 1 shallot
  • 2 tbsp peanut oil

Bumbu or nasi herbs

  • 3 tbsp ketjap manis
  • 1 tsp ginger powder
  • 1 tsp laos
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 chilli pepper

Instructies

Bumbu or nasi herbs

  • Mix all ingredients together and stir well.

Fried cauliflower rice

  • Chop the cauliflower very finely in the food processor. The cauliflower chunks should be about the size of a grain of rice.
  • Saute the finely chopped shallot in the oil. Add the bumbu.
  • Now add all the chopped vegetables. First the white cabbage, then the leek and the carrot.
  • Let it cook for a few minutes until the vegetables are almost cooked.
  • Now add the cauliflower rice. Stir well and let it cook for a few more minutes. Taste and season with salt and pepper.
