Tagliatelle Bolognaise

The traditional pasta Bolognaise, famous all around the world but now in a vegetarian version. We make it with soy chunks and it is delicious.

This classic should of course not be missing on any recipe site. But how do you make these tasty vegetarian? We have the solution, with marinated soy chunks!! Make it in the morning or the evening before so that all the flavors can absorb and enjoy.

Ingrediënten

Tagliatelle Bolognaise

  • 100 gr soy chunks, not too big
  • 20 ml ketjap asin (salty soy sauce)
  • 300 ml water
  • 3 tbsp olive oil
  • 1 large or 2 small white onions
  • 3 stems celery
  • 3 carrots
  • 100 ml red wine
  • 400 ml diced tomatoes
  • 3 cloves
  • 2 tsp oregano
  • 1 hand parsely
  • pepper and salt

Instructies

  • Mix 300 ml water and 20 ml salty soy sauce in a bowl. Add the soy chunks to this and mix well. Now let it marinate for 30 minutes.
  • Meanwhile, cut the onions, carrots and celery into small pieces.
  • Saute the onion in a little olive oil. Add the celery and carrot and cook for 5 minutes.
  • Drain the soy chunks and add them to the vegetable mixture in the pan. Stir well and let it cook for a further 5 minutes.
  • Now add the wine, diced tomatoes, cloves and oregano and bring the sauce to the boil.
  • Simmer for 30 minutes or until the carrots are tender.
  • Season with salt and pepper.
