You prepare this fried cauliflower rice exactly the same as regular fried rice. Only you use very finely chopped cauliflower instead of rice. Less carbohydrates and a lot crispier than the traditional fried rice.

Fried cauliflower rice
1/2cauliflower
1carrot
1/4white cabbage
1thin leek
1shallot
2tbsppeanut oil
Bumbu or nasi herbs
3tbspketjap manis
1tspginger powder
1tsplaos
1tspturmeric
1tspcoriander powder
1tspcumin powder
1chilli pepper

Mix all ingredients together and stir well.
Fried cauliflower rice
Chop the cauliflower very finely in the food processor. The cauliflower chunks should be about the size of a grain of rice.
Saute the finely chopped shallot in the oil. Add the bumbu.
Now add all the chopped vegetables. First the white cabbage, then the leek and the carrot.
Let it cook for a few minutes until the vegetables are almost cooked.
Now add the cauliflower rice. Stir well and let it cook for a few more minutes. Taste and season with salt and pepper.
