Cucumber raïta

Raita is part of the Indian cuisine. In Indian cuisine they use a combination of plates to eat together. A spicy curry, some kind of rice, a chutney and a refreshing raïta. A raïta is a salad with some spices and a yoghurt dressing. This one is made with cucumber but you can make it with any vegetable that you can eat raw.

  • 1 cucumber
  • 1 shallot
  • 1 hand flat-leaf parsley
  • 5 tbsp (vegetable) yogurt
  • 1 tbsp lemon juice
  • 1/2 tsp cumin seed
  • 1 tsp garam masala


  • Coarsely grate the unpeeled cucumber. Finely chop the shallot.
  • Mix the yogurt, lemon juice with cumin and garam masala.
  • Mix the cucumber and shallot with the dressing.
