Spinach with Indian cheese (Palak Paneer)

Spinach is one of our favorite vegetables. This week we made it with Indian spices and homemade Indian cheese (Paneer). You can also buy the Paneer ready-made in the supermarket. If you feel like doing it yourself, we'll give you the recipe for paneer.

Cook it together with lemon rice, cucumber raita and pear chutney

Palak Paneer or Spinach with Indian cheese

This spinach dish from India will fill your kitchen with the scents of India while you can get almost all ingredients from the local supermarket. You can even make the paneer, the Indian cheese, at home. If you don't feel like it or have the time for that, many supermarkets sell the paneer ready-made.

  • 1 colander
  • 1 cheese cloth

  • 2 liter full cream milk
  • 4 tablespoons lemon juice

Palak paneer

  • 1,5 kilo spinach
  • 1 tablespoon ghee
  • 2 teaspoons coriander
  • 1 1/2 teaspoon curcuma
  • 1/2 teaspoon cayennepepper (optional)
  • 2 teaspoons ground fenugreek
  • 1 teaspoon asafoetida (optional)
  • 200 ml cream cheese or sour cream
  • paneer from 2 liters of milk
  • 1 teaspoon salt

  • Boil the milk while stirring.
  • The acidity of the lemon causes the milk flakes and liquid to separate. The liquid, or whey, is greenish in color. If the whey doesn't run completely clear, add a little more lemon juice.
  • Now place the colander on top of a pan and drape the cheesecloth in it.
  • Pour the paneer into the cheesecloth. The whey goes through the colander into the pan while the paneer remains in the cloth. Press it out well so that as much moisture as possible is squeezed out of the paneer.
  • Now put a heavy weight in the colander on top of the paneer. We use our mortar for this, but a pan with water, for example, also works fine.
  • Let it sit for an hour until the paneer has set. Now cut it into cubes and keep it until you need it.
  • The whey contains a lot of vitamin B so don't throw it away. For example, use it to cook the rice that you use with the meal.

Palak paneer

  • Gently cook the washed spinach in the attached water, about 5 minutes. Drain the spinach well and mash/cut it finely.
  • In another pan, heat the ghee and fry the coriander, turmeric, fenugreek, cayenne and asafoetida for a few minutes.
  • Now add the spinach to the spice mixture.
  • Now stir in the sour cream or cream cheese and add the diced paneer.
  • Let it heat through for a few more minutes.
  • Serve with, for example, lemon rice or naan.
