Spicy carrot soup
A spicy carrot soup with ginger. Delicious, easy to make and healthy.

- 500 gr carrots
- 2 cm ginger root
- 2 shallots
- 150 ml coconut milk
- 1 tbsp coconut oil
- 1 handful flat-leaf parsley
- 2 cubes for vegetable stock or 1 liter vegetable stock
Chop the shallots and ginger.
Peel the carrots and cut them into small cubes.
Heat the coconut oil in a soup pot.
Saute the shallots and ginger over low heat for 5 minutes.
Add the carrot cubes to the shallots and ginger.
Add the vegetable stock.
Bring to a boil and cook for 20 minutes (until carrots are tender).
Pour the soup into the blender, add the coconut milk and blend until a fine soup remains.
Taste and season even more with salt and pepper if necessary.
Ladle the soup and sprinkle a handful of parsley over it.
