  • 500 g of potatoes
  • 250 g of rocket
  • 50 g of sundried tomatoes
  • 5 tablespoons of (plantbased) milk
  • 2 tablespoons of (plantbased) butter
  • salt to taste
  • 4 tablespoon s of vegan gravy


  • Cook the diced potatoes until fully cooked.
  • Heat the milk and butter in a saucepan. This will keep the mash hot.
  • Mash the potatoes with the milk and butter until a puree forms.
  • Mix the rocket and the sliced sun-dried potatoes into the puree.
  • Serve with vegan gravy.
