Beetroot salad with parsley, wonderfully fresh and delicious with mezzes but also as a salad with a couscous salad.


Imagine having friends over for friday drinks and serving them a beautiful mezze platter. What a lovely way to start the weekend.

Beetroot salad with cumin, delicious with your mezze

Deliciously fresh and quick beetroot salad of cooked red beets, parsley, red onion and cumin

  • 2 beetroots cooked
  • 1 handfull of fresh parsley
  • 50 ml of olive oil
  • 1/2 teaspoon of cumin seeds
  • 1/2 red onion
  • pepper, salt


  • Cut or grate the beetroots
  • Peel and cut the red onions in half rings
  • Mix the olive oil, cumin seeds, finely chopped parsley, pepper and salt together like a dressing.
  • Mix all the ingredients together and enjoy.
