Pita rolls with veggie chicken pieces and tzatziki
We baked the pita buns ourselves but of course you can also use pita buns from the shop. If you bake them yourself, it will take you a bit longer. Do take some time to make the tzatziki yourself, it takes no time at all and is really delicious in combination with this spicy veggie chicken. Ingrediënten
- 4 pitas
- 500 g vegan chicken
- 1/2 iceberg salad
- 1 medium white onion
Tzatziki
- 1 cucumber
- 200 g Greek yoghurt
- 3-4 cloves of garlic
Merguez spices
- 1 teaspoon of coriander seeds
- 1 teaspoon of cumin seeds
- 1 teaspoon of rosemary
- 1 teaspoon of fennel seeds
- 3 teaspoons of black pepper
- 2 teaspoons of mild paprika powder
- 1 pinch of cayenna pepper if you like spicy
Instructies
Tzatziki
- Peel and grate the cucumber.
- Peel and grate the garlic or squeeze it with a garlic press.
- Add cucumber, garlic, Greek yoghurt together and add some salt and pepper.
- The tzatziki becomes even tastier if it can stand a bit longer, which is why we start with it.
Merguez seasoning (or use a Gyros seasoning mix)
- Toast the coriander seeds and cumin seeds for a few minutes in a dry frying pan.
- Mix all the spices in a mortar and grind to a powder.
Pita buns with filling (bought pita buns)
- Bake the pitas as per the recipe or instructions.
- Mix the spices with 2-3 tablespoons of olive oil and marinate the chicken pieces with this.
- Cut onion into half rings. Fry the chicken pieces crispy first. Remove the chicken pieces from the pan. Then fry the onion until golden brown. Then add the chicken pieces back in and heat through a little more.
- Finely chop the salad.
- Fill the pitas with a few spoonfuls of salad, a few spoonfuls of chicken pieces.
- Serve the pitas with the tzatziki. Enjoy.
