Mexican Poké bowl

Poke bowl comes from Hawaii. There they serve fish together with small cut vegetables in a bowl. Because it looks so delicious, eats so easily in front of the television and can just as easily be taken along for lunch or a picnic, it is a dish with many variations. Hereby we present our Mexican poké bowl. Boiled rice, tasty taco sauce and delicious fresh vegetables.

Mexican Poke Bowl

Eating from a bowl is hip and easy. This Poke Bowl is ideal for eating in front of the TV or just casually with friends and family.

Ingrediënten

Taco sauce

  • 1 red onion
  • 1 red paprika
  • 1 green paprika
  • 1 can of tomato cubes
  • 1 tsp cumin seed
  • 1 tsp coriander seed
  • 1 Spanish pepper (if you don't like spicy leave it out)
  • olive oil
  • pepper and salt

Poke Bowl

  • 200 gr rijst
  • 1/2 red paprika
  • 1/2 green paprika
  • 1 can maïs
  • 1 bowl of cherry tomatoes
  • 2 avocados
  • 1/4 red cabbage

Instructies

Taco sauce

  • Fry a finely chopped onion in 1 tablespoon of olive oil.
  • Cut the peppers into pieces and add them to the onion.
  • Toast the coriander seeds and cumin seeds in a dry frying pan and grind them finely in a mortar. Add to the onion-pepper mixture.
  • Add canned tomatoes and bring to a boil. Now let it simmer for at least 40 minutes.
  • Add salt and pepper to taste.

Poke Bowl

  • Cook the rice as indicated on the packaging.
  • Finely chop the bell pepper, tomato, avocado and cucumber. Finely grate the red cabbage.
  • Put some rice in a bowl and add all the ingredients.
