Mexican Poke Bowl

Ingrediënten
Taco sauce
- 1 red onion
- 1 red paprika
- 1 green paprika
- 1 can of tomato cubes
- 1 tsp cumin seed
- 1 tsp coriander seed
- 1 Spanish pepper (if you don't like spicy leave it out)
- olive oil
- pepper and salt
Poke Bowl
- 200 gr rijst
- 1/2 red paprika
- 1/2 green paprika
- 1 can maïs
- 1 bowl of cherry tomatoes
- 2 avocados
- 1/4 red cabbage
Instructies
Taco sauce
- Fry a finely chopped onion in 1 tablespoon of olive oil.
- Cut the peppers into pieces and add them to the onion.
- Toast the coriander seeds and cumin seeds in a dry frying pan and grind them finely in a mortar. Add to the onion-pepper mixture.
- Add canned tomatoes and bring to a boil. Now let it simmer for at least 40 minutes.
- Add salt and pepper to taste.
Poke Bowl
- Cook the rice as indicated on the packaging.
- Finely chop the bell pepper, tomato, avocado and cucumber. Finely grate the red cabbage.
- Put some rice in a bowl and add all the ingredients.
