This black bean dish is very suitable when friends come over for dinner, it's on the table quickly and everyone enjoys it.

  • 400 gr black beans (dried or canned)
  • 200 gr vegetarian meatballs
  • 4 eggs
  • 2 white onions
  • 2 cloves of garlic
  • 1 chili pepper
  • 1 small can of corn
  • 200 ml water
  • 200 gr peas
  • 20 gr fresh parsley
  • 1 tbsp Cajun spices
  • olive oil, pepper and salt


  • If using dried black beans, soak them in water overnight. The next day you put them in a pan and with a good layer of water. Cook over medium heat until tender. This takes about 1.5 hours. Drain and ready to use. If using a can, open the can.
  • Hard boil the eggs for 10 minutes.
  • Finely chop the chilli, garlic and onion.
  • Cut the meatballs in half.
  • Heat the olive oil in a large frying pan and briefly fry the balls, onion, chili pepper, cajun spices and garlic.
  • Add the corn, peas and beans and fry for another 2 minutes.
  • Add the water and mix well. Put a lid on the pan and let it cook on low heat for a few minutes.
  • Add salt and pepper to taste.
  • Put the bean mixture in a nice dish and garnish with the eggs and parsley.

  • Delicious with rice or fresh bread.
