If using dried black beans, soak them in water overnight. The next day you put them in a pan and with a good layer of water. Cook over medium heat until tender. This takes about 1.5 hours. Drain and ready to use. If using a can, open the can.
Hard boil the eggs for 10 minutes.
Finely chop the chilli, garlic and onion.
Cut the meatballs in half.
Heat the olive oil in a large frying pan and briefly fry the balls, onion, chili pepper, cajun spices and garlic.
Add the corn, peas and beans and fry for another 2 minutes.
Add the water and mix well. Put a lid on the pan and let it cook on low heat for a few minutes.
Add salt and pepper to taste.
Put the bean mixture in a nice dish and garnish with the eggs and parsley.
