Vegan bourguignon with seitan and mushrooms

The flavors of a classic French bourguignon but in the vegan version. Delicious with seitan, mushrooms, carrots, potatoes and celery.

Vegan Bourguignon

This delicious Bourguignon has the same classic flavors as the Boeuf Bourguignon, but we have replaced the meat with seitan.

Ingrediënten

  • 2 cloves of garlic
  • 2 white onions
  • 250 g chestnut mushrooms
  • 5 medium potatoes
  • 500 g carrots
  • 300 gr celery
  • 2 tablespoons tomato paste
  • 2 tablespoons thym
  • 2 laurelleaves
  • 100 ml vegetable stock
  • 750 ml red wine
  • 400 g seitan
  • olive oil, salt and pepper

Instructies

  • Heat oil in a pan and sauté the onions for a few minutes before adding in the mushrooms, carrots, celeriac, potatoes garlic, thyme, and the rest of the spices. Sauté a bit longer.
  • After a few minutes, add the tomato puree. Stir well. Baked tomato paste is much sweeter than unbaked.
  • Now add the stock and red wine and bring to the boil.
  • Simmer for about 40 minutes.
  • In the meantime, you sauté the seitan, homemade or otherwise, in a frying pan and then cut it into pieces. Add the seitan to the stew.
  • Season with salt and pepper.
  • Lovely with white rice or potato mash.
