Porties: 4 portions

Apparatuur

  • 1 ovenproof pan with a diameter of 24 cm

Ingrediënten

  • 1 roll puff pastry
  • 12 shallots
  • 1 red onion
  • 3 sprigs fresh thyme or 1 teaspoon dried thyme
  • 3 table spoons balsamic vinegar
  • olive oil, pepper, salt

Instructies

  • Peel the shallots and halve them. Peel the red onion and cut it into thick slices.
  • Heat the butter and some oil in an ovenproof pan and fry the shallots and onion in it. Do not turn them too often or they will fall apart. Let it cook for 15 minutes.
  • Then add a good dash (about 3 tablespoons) of balsamic vinegar and the thyme. Cook for a further 5 minutes so that the balsamic flavor infuses the onions and the mixture is not too soggy.
  • Preheat the oven to 180 degrees.
  • Now place the onions and shallots neatly in the pan, try to make a nice pattern, although that does not affect the taste of course. Leave the edges of the pan free.
  • Now cover the onions with the puff pastry and fold the edges around the onions.
  • Bake the tarte tatin in the oven for 20 minutes.
  • Invert the tarte tatin onto a plate and serve immediately. Enjoy your meal.
