Sweet potato soup

Suddenly we felt like soup, but there was little in the vegetable drawer. Just a big sweet potato really. We always have onions, peppers and ginger in stock, so this soup was made in no time. No time, fancy a warming spicy soup? Then you have now found the recipe.

  • 1 sweet potato medium
  • 1 white onion medium
  • 1 cm ginger root (if you don't like spicy, take a little less)
  • 1 Chilli (if you don't like very spicy, remove the seeds)
  • 1 liter vegetable stock
  • olive oil, pepper, salt


  • Saute the finely chopped onion in a tablespoon of olive oil. After a few minutes, add the finely chopped ginger and chilli. After a few minutes, add the diced sweet potato.
  • Add the vegetable stock and cook for 20 minutes until the potato is completely cooked.
  • Blend the soup completely. Enjoy your meal.
