This is just like real Asian street food, we imagined ourselves back in the streets in Thailand where Pad Thai is available everywhere. Just try it once. And if you can't find tamarind paste (it also cost us some effort), you just make it without it.

Ingrediënten

  • 1 Red onion
  • 1 chilli pepper
  • 1 thin leek
  • 1 medium carrot
  • 150 gram chestnut mushrooms
  • 150 gram rice noodles
  • 1 eetlepel tamarinde paste
  • 1 eetlepel sweet chili sauce
  • 1 eetlepel soy sauce salt
  • sunflower oil or peanut oil
  • 1 lime
  • 1 handful of unsalted peanuts
  • 2 eieren

Instructies

  • Saute the chopped onion in the oil. After a few minutes, add half of the chilli and garlic, stir well.
  • Add the chestnut mushrooms in pieces and stir well.
  • Now add the finely chopped leek and carrots and let it stew for a few minutes.
  • Cook the rice noodles according to the instructions in a little salt water.
  • Beat the eggs and make a thin omelette.
  • Mix the tamarind paste, sweet chili sauce and soy sauce together.
  • When the noodles are cooked and drained, mix the sauce, vegetable mixture and noodles well.
  • Serve with a few strips of omelette, a few peanuts, a few chopped chili peppers and half a lime. Squeeze some lime juice over the noodles and enjoy.
