Ingrediënten
- 400 gr boiled lentils from a jar
- 3 tomatoes
- 3 carrots
- 1 red bell pepper
- 150 gr tomato paste
- 2 medium white onions
- 2,5 cm ginger
- 3 tbsp vegetable yogurt
- 2 cloves of garlic
- 1 chili
- salt and pepper
- 1 tsp garam massala
- 1 tsp turmeric
- 1 tsp ground cumin seeds
- 1 tsp coriander seed
- 1 tsp red curry (paste or spice powder)
Instructies
- Saute chopped onion in some oil. After a few minutes, add the garlic and grated ginger. Let simmer for another 5 minutes.
- Add diced carrots and diced bell pepper to the onion garlic mixture.
- Toast the coriander and cumin seeds in a dry frying pan. Keep shaking the pan. After a few minutes, your whole kitchen will smell exotic and the job will be done. Mix the roasted herbs with the unroasted herbs in a mortar and mash them well.
- In the meantime, make a sauce from the roasted and crushed herbs, the tomato puree and the yogurt.
- Add the sauce to the vegetables in the frying pan and toss. Add 50 ml of water.
- Simmer for 15 minutes, add lentils, heat through for another 5 minutes, add salt to taste.
