After our discovery of home made seitan we tried if we can make seitan balls. And it worked fabulously!

Seitan balls in tomato sauce

Making your own seitan is easier than you think. And once you can do it, you can make anything with it. Like these seitan 'minced meat' balls in tomato sauce.

Ingrediënten

Seitan

  • 150 g wheat gluten
  • 170 g lentils from a jar
  • 60 ml tomato ketchup
  • 2 tablespoons nutritional yeast (optional)
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 120 ml water
  • 3 tablespoons salty soy sauce
  • salt, pepper
  • olive oil or butter

Seitan balls

  • 1 white onion
  • 1 teaspoon mustard
  • 1 teaspoon spicy paprika powder
  • 1 tablespoon lineseeds or 1 egg
  • 2 tablespoons bread-crumbs

Tomato sauce

  • 1 white onion
  • 400 ml tomato cubes
  • 1 teaspoon cinnamon
  • 1-2 tablespoons Ras el Hanout
  • olive oil or butter
  • 1 handfull fresh coriander

Instructies

Seitan

  • Puree the lentils in a food processor.
  • Add all other ingredients and knead well. Within a few minutes a fairly juicy dough is created. Let this dough rest for an hour in the refrigerator.
  • Now cut the dough into several pieces.
  • Steam or boil the seitan for 30 minutes. We used the steamer for this, but cooking is also fine. Do not let the water boil too hard, but rather let it simmer slowly.

Seitan balls

  • After the seitan is cooked, finely chop it in the food processor. Mix it with a finely chopped onion, the mustard, salt and pepper.
  • If you want to keep them completely vegan, mix a tablespoon of linseed with two tablespoons of water and leave for a few minutes. This creates a sticky paste that you can use to bind the seitan mixture.
  • If you don't want to keep it vegan, mix an egg into the mixture.
  • Then add two tablespoons of breadcrumbs in both cases and knead the mixture well and then turn it into balls.
  • Brown the balls in a dash of olive oil.

Tomato sauce

  • Fry a finely chopped onion in a dash of olive oil.
  • Add the cinnamon.
  • Add the tomato cubes
  • Season with ras el hanout, pepper en salt
  • Now add the balls and garnish with some coriander leaves.
