We agreed that we were going to make a leek quiche, and in the meantime also found a red pepper and some mushrooms in the fridge. And that's what makes these pies so easy, you can easily add other vegetables to them. It is delicious hot, but also great to eat cold.

Ingrediënten

  • 1 puff pastry
  • 1 leek
  • 2 white onions
  • 150 gr mushrooms
  • 1 little red bell pepper
  • 3 eggs
  • 2 tsp oregano (dried)
  • 1 tsp spicy paprika powder
  • 200 ml soy cream
  • 100 gr grated cheese
  • 2 table spoons bread crumbs
  • olive oil, salt, pepper

Instructies

  • Preheat the oven to 180 degrees.
  • Grease a quiche tin and line the bottom with baking paper.
  • Cut the leek, onions, mushrooms and bell pepper into pieces. Fry the onions in oil until translucent and add the bell pepper and leek and finally the mushrooms. Add salt, pepper, paprika and oregano and toss everything well. Fry the whole thing until al dente.
  • Meanwhile, line the mold with the puff pastry and trim the edges neatly. Poke holes in the bottom and sprinkle the bottom with the breadcrumbs.
  • Now spoon the vegetable mixture into the mold and spread it well.
  • Beat the eggs and soy cream until foamy and pour over the vegetable mixture. Finally, divide the grated cheese on top and place in the oven.
  • Bake the quiche for about 45 minutes. Enjoy your meal!
  • Tip: You can make a tasty snack with the leftover puff pastry. Spread with pesto and grated cheese and bake in the oven for 15 minutes.
