Pasta salad with tomatoes, mozzarella and basil
This pasta salad is a real summer dish, very easy and quick to make. Suitable as an evening meal but also easy to take with you for lunch or a picnic.

Ingrediënten
- 500 gr pasta, we used penne
- 250 gr cherry tomatoes
- 100 gr basil
- 1 ball mozzarella
- balsamic vinegar, olive oil, pepper, salt
Instructies
- Cook the pasta in salted water, according to the package directions.
- Place about half of the tomatoes with 2 tablespoons of balsamic vinegar, 2 tablespoons of olive oil, salt and pepper in a baking tin in the oven for about 10 minutes.
- Wash the basil.
- Cut the mozzarella into slices or use the small mozzarella balls.
- Drain the cooked pasta and let it cool for a while.
- Now mix the roasted tomatoes, the raw tomatoes and the pasta together. Taste and add salt and pepper to taste. If you find it too dry, use another 1-2 tablespoons of olive oil.
- Spoon the pasta salad into the bowls and garnish with the mozzarella and basil.
