Pasta salad with tomatoes, mozzarella and basil
This pasta salad is a real summer dish, very easy and quick to make. Suitable as an evening meal but also easy to take with you for lunch or a picnic.

- 500 gr pasta, we used penne
- 250 gr cherry tomatoes
- 100 gr basil
- 1 ball mozzarella
- balsamic vinegar, olive oil, pepper, salt
Cook the pasta in salted water, according to the package directions.
Place about half of the tomatoes with 2 tablespoons of balsamic vinegar, 2 tablespoons of olive oil, salt and pepper in a baking tin in the oven for about 10 minutes.
Wash the basil.
Cut the mozzarella into slices or use the small mozzarella balls.
Drain the cooked pasta and let it cool for a while.
Now mix the roasted tomatoes, the raw tomatoes and the pasta together. Taste and add salt and pepper to taste. If you find it too dry, use another 1-2 tablespoons of olive oil.
Spoon the pasta salad into the bowls and garnish with the mozzarella and basil.
