Oyster mushroom soup

Oyster mushroom soup, easy and delicious 30 minute recipe

  • 2 shallots
  • 1 clove of garlic (optional)
  • 1 tablespoon of fresh thyme
  • 250 g of oyster mushrooms
  • 1 litre vegetable stock
  • olive oil, pepper, salt


  • Fry the finely chopped shallots in two tablespoons of olive oil.
  • Add the sliced oyster mushrooms and stir well.
  • Now add the thyme and vegetable stock and bring to the boil.
  • Allow to cook for 20 minutes.
  • Now remove a few pieces of oyster mushroom from the soup and blend the rest until a bound soup forms.
  • Serve the soup and garnish with the oyster mushroom pieces.
