Oyster mushroom soup
Oyster mushroom soup, easy and delicious 30 minute recipe

- 1 blender
Ingrediënten
- 2 shallots
- 1 clove of garlic (optional)
- 1 tablespoon of fresh thyme
- 250 g of oyster mushrooms
- 1 litre vegetable stock
- olive oil, pepper, salt
Instructies
- Fry the finely chopped shallots in two tablespoons of olive oil.
- Add the sliced oyster mushrooms and stir well.
- Now add the thyme and vegetable stock and bring to the boil.
- Allow to cook for 20 minutes.
- Now remove a few pieces of oyster mushroom from the soup and blend the rest until a bound soup forms.
- Serve the soup and garnish with the oyster mushroom pieces.
