- 2 shallots
- 1 clove of garlic (optional)
- 1 tablespoon of fresh thyme
- 250 g of oyster mushrooms
- 1 litre vegetable stock
- olive oil, pepper, salt
Fry the finely chopped shallots in two tablespoons of olive oil.
Add the sliced oyster mushrooms and stir well.
Now add the thyme and vegetable stock and bring to the boil.
Allow to cook for 20 minutes.
Now remove a few pieces of oyster mushroom from the soup and blend the rest until a bound soup forms.
Serve the soup and garnish with the oyster mushroom pieces.
