Puff pastry tart with potato, leek and red onion

After our first puff pastry tart we have an addiction. What a wonderful easy dish and how many variations are possible.

Ingrediënten

  • 1 package puff pastry or 1 large sheet
  • 1 egg
  • 2 tbsp cream cheese
  • 20 cm leek, we only use the white part
  • 7 small baby potatoes or 3 larger ones
  • 1 small red onion
  • 1 tbsp thyme
  • 1 tbsp rosemary
  • salt, pepper

Instructies

  • Place the puff pastry on a baking tray lined with baking paper. Curl the edges so that the edge is slightly higher than the tart.
  • Separate the egg, beat the yolk. Brush the edge of the puff pastry with the egg yolk. Poke holes in the bottom of the puff pastry with a fork.
  • Mix the remaining yolk, egg white and cream cheese together. Brush the bottom of the pie with this cheese-egg mixture.
  • Cut the potatoes into thin slices, the leek into thin blades and the red onion into thin rings.
  • Put the potatoes on the puff pastry so that the entire bottom is covered.
  • The leek and red onion are placed on top of the potatoes.
  • Add pepper, salt, rosemary and thyme.
  • Preheat the oven to 200 degrees.
  • Bake the puff pastry tart for about 20 minutes.
