Puff pastry tart with potato, leek and red onion
After our first puff pastry tart we have an addiction. What a wonderful easy dish and how many variations are possible.

Ingrediënten
- 1 package puff pastry or 1 large sheet
- 1 egg
- 2 tbsp cream cheese
- 20 cm leek, we only use the white part
- 7 small baby potatoes or 3 larger ones
- 1 small red onion
- 1 tbsp thyme
- 1 tbsp rosemary
- salt, pepper
Instructies
- Place the puff pastry on a baking tray lined with baking paper. Curl the edges so that the edge is slightly higher than the tart.
- Separate the egg, beat the yolk. Brush the edge of the puff pastry with the egg yolk. Poke holes in the bottom of the puff pastry with a fork.
- Mix the remaining yolk, egg white and cream cheese together. Brush the bottom of the pie with this cheese-egg mixture.
- Cut the potatoes into thin slices, the leek into thin blades and the red onion into thin rings.
- Put the potatoes on the puff pastry so that the entire bottom is covered.
- The leek and red onion are placed on top of the potatoes.
- Add pepper, salt, rosemary and thyme.
- Preheat the oven to 200 degrees.
- Bake the puff pastry tart for about 20 minutes.
