Puff pastry tart with chicory, apple and walnuts

In addition to the quiches that we enjoy very much, we have recently become very enthusiastic about the plate cake. Fill a sheet of puff pastry with a few matching ingredients, bake it in the oven and enjoy. We made this plate cake with chicory, red onion, apple and walnuts. We braised the chicory before it went into the oven. This makes it nice and soft and creamy.

  • 2 heads of chicory
  • 1 tbsp vegetable butter
  • 1 small red onion
  • 1 egg
  • 25 gr cream cheese
  • 40 gr walnuts
  • pepper and salt


  • Halve the chicory heads and remove the bitter tip. Melt the vegetable butter and braise the chicory. You do this by placing the chicory in the butter and covering it with a sheet of baking paper. Put the lid on the pan. The baking paper keeps the moisture released from the chicory in the pan. Turn the chicory every few minutes so that it browns on all sides. If you can easily pierce the chicory with a fork, it is done. It took us about 20 minutes.
  • At the same time, fry the finely chopped red onion in a frying pan.
  • Preheat the oven to 180 degrees.
  • If you are using a large sheet of puff pastry, roll it out on a baking tray. If you are using small sheets, place them side by side on a baking tray and press the edges closed with your fingers. Fold the edges of the puff pastry so that the edge is slightly higher than the bottom. Poke holes in the bottom with a fork.
  • Beat the egg. Mix half of the egg with the cream cheese. Spread this mixture on the bottom of the pastry tart.
  • Now fill the puff pastry with the chicory heads, the red onion and the apple pieces. Season with salt and pepper.
  • Use the remaining half of the egg to brush the edges of the tart. This gives the edge a nice golden brown color.
  • Now bake the tart in the oven for 15 minutes.
  • Now sprinkle the walnuts over the puff pastry tart and bake for another 5 minutes. If the edge is a nice golden brown, the cake is ready. Enjoy your meal.
