  • 2 pre-cooked red beets
  • 1 tbsp vegetable butter
  • 1 small red onion
  • 1 egg
  • 25 gr cream cheese
  • 50 gr soft goat cheese
  • pepper and salt
  • 3 sprigs of fresh thyme
  • 1 lemon


  • Fry the finely chopped red onion in a frying pan.
  • Cut the red beets into thin slices.
  • Preheat the oven to 180 degrees.
  • If you are using a large sheet of puff pastry, roll it out on a baking sheet. If you are using small sheets, place them side by side on a baking tray and press the edges together with your fingers. Fold the edges of the puff pastry so that the edge is slightly higher than the bottom. Poke holes in the bottom with a fork.
  • Beat the egg. Mix half of the egg with the cream cheese. Spread this mixture on the bottom of the plate cake.
  • Grate the lemon zest. Separate the thyme leaves from the sprigs.
  • Now fill the tart with the beets, the red onion and the goat cheese. Season with thyme, salt and pepper. Sprinkle the lemon zest over it.
  • Use the remaining half of the egg to brush the edges of the pie. This gives the edge a nice golden brown color.
  • Now bake the pie in the oven for 20 minutes.
  • If the edge is a nice golden brown, the cake is ready. Enjoy your meal
