Oyster mushroom balls

Delicious oyster mushrooms balls. Delicious on the drink board or as a snack with a nice movie. We usually make a lot of them at once because they freeze well.

Oyster mushroom balls

Delicious snack balls. In the Netherland they get eaten with meat in their insides during drinks in a bar. But now we have a vegetarian alternative which is just as tasty.

The filling

  • 250 g oyster mushrooms
  • 3 shallots
  • 3 tablespoons of flour
  • 200 ml milk (vegetable milk or cow milk)
  • 1 tablespoon butter
  • 1 handfull parsley

The balls

  • 4 tablespoons flour
  • 2 eggs
  • 12 tablespoons of bread crump


  • Cut the shallots small, tear the oyster mushrooms into strips (not too small)
  • Melt the butter in a deep-bottomed pan and saute your shallots for a few minutes but keep them soft.
  • Add the oyster mushrooms, stir together and let simmer for 10 minutes.
  • Now remove the oyster mushrooms and shallots from the pan.
  • Make the roux: melt the butter and add the flour to the melted butter. Stir well with a wooden spoon until the flour is cooked. Then add the milk and keep stirring until a roux is formed that is firm but still slightly runny. Now add the oyster mushrooms, shallots and finely chopped parsley. Stir well and season with salt and pepper. Taste until you are satisfied with the taste. Make it a little saltier than you normally would because frying reduces the salty taste.
  • Now pour the filling into a bowl and cover it completely with plastic foil (to prevent a skin from forming). Let the filling cool completely in the refrigerator, preferably overnight, but a few hours is also sufficient.

Creating the balls

  • Prepare 3 soup plates and fill one with the flour, one with the beaten eggs and one with the breadcrumbs.
  • Wet your hands and scoop a tablespoon of the filling onto your hand. Roll it into a small ball and place it in the flour. Roll the ball in the flour until the entire filling is covered.
  • Now put the ball in the egg and stir the ball through the egg until the whole ball is covered.
  • Now put the ball in the breadcrumbs and stir the ball through the breadcrumbs until the whole ball is covered.
  • Repeat until all the filling is used up.
  • This is the moment when you decide which balls you will serve now and which balls will go in the freezer.
  • De ballen die je wil invriezen, kun je het beste even afkoelen in de koelkast en in een grotere plastic bak doen, zodat ze niet aan elkaar gaan plakken.
  • You fry the balls you want to serve for a few minutes at 180 degrees, until the ball has a nice light brown color.
