Delicious minestrone soup, well filled with celery, green beans, pepper, onion and all sorts of other goodies from your vegetable drawer. Minestrone soup is one of the Italian classics that you simply must have eaten and cooked once. Our recipe is nice and simple and quick to prepare.

Ingrediënten

  • 1 small potato
  • 5 stalks of celery
  • 4 carrots
  • 1 red bellpepper
  • 1 white onion
  • 100 g green beans
  • 1 zucchini
  • 400 ml pureed tomatoes
  • 1 can tomatopaste
  • 1,5 litre vegetable stock
  • olive oil, pepper, salt

Instructies

  • Peel and cut all the vegetables small and wash them well.
  • Sauté the onion in a little olive oil.
  • Now add the potato and carrot first, stir well and cook for a few minutes.
  • Now add the pepper, green beans, celery and stir well.
  • Now add the tomato paste, stir well and cook for a while. Tomato puree gets sweeter as you fry it, delicious.
  • Now add the pureed tomatoes and vegetable stock and bring to the boil.
  • Simmer for 15 minutes until the carrot is almost tender. Then add the diced courgette and cook for another 5 minutes.
  • Taste, season with pepper and salt.
