Minestronesoup
Delicious Italian minestrone soup with all the vegetables to be used today.

Ingrediënten
- 1 small potato
- 5 stalks of celery
- 4 carrots
- 1 red bellpepper
- 1 white onion
- 100 g green beans
- 1 zucchini
- 400 ml pureed tomatoes
- 1 can tomatopaste
- 1,5 litre vegetable stock
- olive oil, pepper, salt
Instructies
- Peel and cut all the vegetables small and wash them well.
- Sauté the onion in a little olive oil.
- Now add the potato and carrot first, stir well and cook for a few minutes.
- Now add the pepper, green beans, celery and stir well.
- Now add the tomato paste, stir well and cook for a while. Tomato puree gets sweeter as you fry it, delicious.
- Now add the pureed tomatoes and vegetable stock and bring to the boil.
- Simmer for 15 minutes until the carrot is almost tender. Then add the diced courgette and cook for another 5 minutes.
- Taste, season with pepper and salt.
