Surprising lukewarm salad with roasted pumpkin, mushrooms and blue cheese on a bed of arugula and lamb's lettuce.

Ingrediënten

  • 1/2 pumpkin
  • 12 mushrooms
  • 1 bag rocket/lamb's lettuce
  • 100 gr blue cheese
  • 4 table spoons dukkah
  • olive oil, pepper, salt

Instructies

  • Preheat the oven to 180 degrees.
  • Roast the pumpkin in the oven for 30 minutes until cooked through but still slightly firm.
  • Fry the mushrooms in a dash of olive oil.
  • Cut the pumpkin into dice.
  • Mix the pumpkin with the arugula/lamb's lettuce, and mushrooms and the blue cheese. Garnish with the dukkah.
