Lukewarm pumpkin salad with blue cheese
Surprising lukewarm salad with roasted pumpkin, mushrooms and blue cheese on a bed of arugula and lamb's lettuce.

- 1/2 pumpkin
- 12 mushrooms
- 1 bag rocket/lamb's lettuce
- 100 gr blue cheese
- 4 table spoons dukkah
- olive oil, pepper, salt
Preheat the oven to 180 degrees.
Roast the pumpkin in the oven for 30 minutes until cooked through but still slightly firm.
Fry the mushrooms in a dash of olive oil.
Cut the pumpkin into dice.
Mix the pumpkin with the arugula/lamb's lettuce, and mushrooms and the blue cheese. Garnish with the dukkah.
