Leek and potatosoup

Well known in the UK, for us as Dutchies in Spain relatively new. But now as we tasted it again, it will be made regularly in our kitchen. After all what is not to like on this soup.

Leek and potato soup

A recipe well known in the UK but tastes very good wherever you are. The combination of leeks and potatos is delicious.

  • 2 cloves garlic
  • 400 gr potatos
  • 400 gr leeks, about 3 of them
  • 1 liter water
  • 2 vegetable broth tablets
  • 100 ml vegetable cooking cream (optional)
  • olive oil, pepper, salt


  • Saute the chopped garlic cloves in the olive oil for a minute.
  • Add the peeled, diced potato and stir well.
  • Add the finely sliced leeks and stir well.
  • Now add the water and vegetable stock tablets. Bring to the boil and let it cook for about 15 minutes. When the potatoes are well cooked, the soup is ready.
  • Puree the soup in a blender or use an immersion blender. Season further with salt and pepper if desired.
  • Serve the soup and pour in a little bit of cooking cream.
