Deconstructed carrot and onion stew
Sure enough, we're just joining the trend to modernize an old-fashioned favorite dish. Just let all the stew ingredients cook in the oven and you're done.

Ingrediënten
- 500 gr potatoes
- 300 gr carrots
- 200 gr white onions (or you buy 500 grams of pre-cut stew vegetables of course)
- 2 tbsp olive oil
- 100 ml vegan gravy (see recipe on this site)
Instructies
- Saute the sliced onions in the olive oil for a few minutes.
- Preheat the oven to 180 degrees.
- Meanwhile, peel the potatoes and carrots. Cut both into pieces.
- Now fill an oven dish with a row of potatoes, a row of carrots, etc. until the oven dish is filled. Sprinkle your pre-fried onions on top.
- Bake the stew in the oven for 30 minutes. Occasionally poke the potato slices to check for doneness.
- Serve with vegetarian smoked sausage, with vegan bacon and vegan gravy. Recipes for both bacon and gravy are here on the site.
