Deconstructed carrot and onion stew (Dutch hutspot)

Deconstructed 'hutspot', a Dutch favourite. Old-fashioned hutspot, which Dutchman did not grow up with it. Mashed potatoes with mashed carrots and onions mixed in. We still enjoy it regularly. But this deconstructed hutspot is something different, less heavy and it looks tastier.

Sure enough, we're just joining the trend to modernize an old-fashioned favorite dish. Just let all the stew ingredients cook in the oven and you're done.

Ingrediënten

  • 500 gr potatoes
  • 300 gr carrots
  • 200 gr white onions (or you buy 500 grams of pre-cut stew vegetables of course)
  • 2 tbsp olive oil
  • 100 ml vegan gravy (see recipe on this site)

Instructies

  • Saute the sliced ​​onions in the olive oil for a few minutes.
  • Preheat the oven to 180 degrees.
  • Meanwhile, peel the potatoes and carrots. Cut both into pieces.
  • Now fill an oven dish with a row of potatoes, a row of carrots, etc. until the oven dish is filled. Sprinkle your pre-fried onions on top.
  • Bake the stew in the oven for 30 minutes. Occasionally poke the potato slices to check for doneness.
  • Serve with vegetarian smoked sausage, with vegan bacon and vegan gravy. Recipes for both bacon and gravy are here on the site.
