Cauliflower pizza with spinach and blue cheese

We often find ourselves eating too many carbohydrates. So we started looking for meals where we could reduce the carbohydrates but still eat just as delicious. One of our favorites is homemade pizza so that one came first on the list. Searching gave us cauliflower pizza. And to our surprise it tasted really delicious with a firm bite just like the regular pizza. We filled it with spinach, mushrooms and blue cheese. Incredibly tasty.

Ingrediënten

Bloemkoolpizza

  • 1 cauliflower (450 g)
  • 50 g (Vegan) Parmezan cheese
  • 50 g Mozzarella cheese
  • 1 egg
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon salt

Toppings

  • 400 g spinach
  • 150 g blue cheese, we used Gorgonzola
  • 250 g mushrooms

Instructies

Cauliflower pizza

  • Grind the cauliflower. This can be done in a food processor or with a grater.
  • Steam or boil the cauliflower in a little water, about 7 minutes.
  • Let the cauliflower cool and place it in a clean tea towel. Wring the tea towel with the cauliflower well until the cauliflower is dry.
  • Chop the mozzarella very finely or use shredded mozzarella.
  • Mix the dried cauliflower with the herbs, cheese and egg until a dough-like mixture is formed. Season with salt and pepper.
  • Preheat the oven to 200 degrees.
  • Now line a baking tray or a baking tin with baking paper and make a layer of cauliflower mixture of about 1 cm thick. Flatten it with an upturned spoon or with wet hands.
  • Bake the cauliflower base in the oven for about 20 minutes until the base is completely cooked.

Toppings

  • If you are using fresh spinach, cook it in a little water for 3 minutes and drain well. Chop the spinach as finely as possible.
  • Saute the mushrooms in a dash of olive oil. Season with salt and pepper.
  • Cut the blue cheese into small pieces

Baking the pizza

  • Cover the pizza base with a layer of spinach, a handful of mushrooms and a handful of blue cheese.
  • Bake the pizza in the oven for about 10 minutes. It is ready when the blue cheese has completely softened.
  • Add a handful of arugula. Enjoy your dinner.
