Cauliflower parsnip soup with almonds

Tasty hearty soup with cauliflower and parsnips, garnished with roasted almonds.

Ingrediënten

  • 4 tablespoons of almonds
  • 4 tablespoons of butter
  • 1 parsnip
  • 0,5 cauliflower
  • 1 white onion
  • 1 leek
  • 3 cloves of garlic
  • 2 sprigs of rosemary
  • 350 ml vegetable stock
  • 150 ml cooking cream
  • olive oil, pepper, salt

Instructies

  • Fry the onion for a few minutes. Then add the garlic and the sliced parsnips. Simmer for 5 minutes.
  • Now add the chopped cauliflower and leeks. Simmer for another 10 minutes.
  • Now add the stock and bring to the boil. Simmer for a few more minutes until all the vegetables are tender.
  • Now add the cooking cream.
  • Puree the soup with a hand blender or in a blender.
  • Toast the almonds and crush them using a mortar.
  • Garnish the soup with the almonds.
