Cauliflower parsnip soup with almonds

- 4 tablespoons of almonds
- 4 tablespoons of butter
- 1 parsnip
- 0,5 cauliflower
- 1 white onion
- 1 leek
- 3 cloves of garlic
- 2 sprigs of rosemary
- 350 ml vegetable stock
- 150 ml cooking cream
- olive oil, pepper, salt
Fry the onion for a few minutes. Then add the garlic and the sliced parsnips. Simmer for 5 minutes.
Now add the chopped cauliflower and leeks. Simmer for another 10 minutes.
Now add the stock and bring to the boil. Simmer for a few more minutes until all the vegetables are tender.
Now add the cooking cream.
Puree the soup with a hand blender or in a blender.
Toast the almonds and crush them using a mortar.
Garnish the soup with the almonds.
