American pancakes

We made this stack of American pancakes with the idea that we would probably have left over for dessert. But once we tasted them, the pile was gone in a matter of minutes. Also try this variation on our pancakes.

American pancakes

American pancakes are usually made with buttermilk, but we made them vegan. Simply mix soy milk with lemon juice, we can't make it any simpler.

  • 400 ml soy milk (unsweetened)
  • 1 lemon
  • 250 gr all-purpose flour
  • 1 tsp vanilla extract
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 2 eggs
  • 100 gr blueberries
  • sunflower oil
  • agave syrup or maple syrup


  • Mix the soy milk with the juice of 1 lemon.
  • Now mix this milk with the vanilla extract, flour, baking powder, salt and sugar to a batter.
  • Add the eggs one at a time and beat the batter well.
  • Heat a little sunflower oil in a frying pan and fry the pancakes. You can either frie them one by one or 3 in a frying pan. Turn them over so that both sides are nicely browned.
  • Stack the pancakes and pour a generous dash of agave syrup or maple syrup over them. Some blueberries top it all off.
