Applesauce cake

This applesauce cake stays nice and moist because of the applesauce, is less heavy because of the lack of butter. We used oat flour for this but you can make the same recipe just fine with regular flour. The cinnamon makes your whole kitchen smell delicious.

Apparatuur

  • 1 baking tin 25 x 10 cm

Ingrediënten

  • 200 gr unsweetened apple sauce
  • 150 gr oat flour (finely grind yourself if necessary)
  • 3 eggs
  • 2 1/5 tsp baking powder
  • 2 tsp cinnamon
  • 50 gr raisins
  • 50 gr coarsely chopped walnuts (keep 3 whole ones separate)
  • 1 apple peeled and chopped

Instructies

  • Preheat the oven to 175 degrees.
  • Grease a baking tin and cover with baking paper.
  • Mix the apple sauce and eggs in a bowl.
  • Add oat flour, baking powder and cinnamon.
  • When everything is well mixed, add the raisins and chopped walnuts.
  • Finally, mix in the apple pieces.
  • Pour the batter into the baking tin and bake in the middle of the oven for about 55 minutes. Put the three whole walnuts on top.
  • After the baking time, insert a skewer in the cake. If the skewer comes out dry, the cake is ready.
  • Let it cool for 10 minutes and then turn the cake onto a wire rack to cool further.
