Years ago I got a similar dessert during a delicious vegan lunch. The cook was then Marlies Geertsema. Since then I have tried several variants and this one is my favorite. Ideal dessert because it can even be prepared the day before. You can sit comfortably at the table with your guests. And if you have one left, breakfast for the next day is all ready.

Ideal dessert because it can even be prepared the day before. You can sit comfortably at the table with your guests. And if you have one left, breakfast for the next day is also arranged.

Ingrediënten

Curd

  • 1/2 litre yogurt
  • 1 lemon

First layer

  • 8 dates
  • 100 gr hazelnuts

Topping

  • 12 raspberries
  • 16 blueberries

Instructies

  • Cover a colander or strainer with cheesecloth (or a very clean tea towel) and place it over a container.
  • Pour the yogurt into the cloth, fold the cloth closed and let it drain for 20 minutes.
  • Remove the drained liquid and spoon the curd into the dish.
  • Add the zest of a lemon and stir well.
  • Put the hazelnuts in a blender or grind them fairly fine in a mortar. Scoop out 2 tablespoons of hazelnuts. Now add the dates and grind the nuts and dates together until a sticky mass is formed.
  • Take 4 small dishes (I like glass dishes because you can see the layers well). and divide the date-nut mass over the dishes. Press finely with a teaspoon.
  • Divide the curd with lemon zest over the 4 dishes.
  • Add the raspberries and blueberries (or other fruit if you prefer) and top with the finely ground hazelnuts.
