Potato salad

- 1 kilo firm potatoes
- 100 gr pickles
- 100 gr silver onions
- 50 gr capers
- 3 tbsp mayonnaise (vegan or regular)
- 3 tbsp (vegetable) yogurt
- 1 hand parsley
Boil the peeled potatoes until just tender, about 20 minutes.
Drain the potatoes and cool them in ice cold water to stop the cooking process.
Cut the potatoes into cubes so that the salad can be eaten with a fork or spoon.
Mix the mayonnaise and yogurt together and add the rest of the ingredients.
Taste, season with salt and pepper and garnish with chopped parsley.
