Omelette with green asparagus
This omelette with green asparagus is very suitable for breakfast as well as for lunch. We ate it on one of our own baked brioche buns.

- 250 gr green asparagus
- 2 shallots
- 4 eggs
- 2 tbsp plant-based milk (optional)
- olive oil, pepper, salt
Finely chop the shallots and fry them in the olive oil for a few minutes.
Cut off the woody ends of the asparagus, wash and cut into 2-3 cm pieces.
Add the asparagus to the shallots and stir well.
Beat the eggs in a bowl and season with salt and pepper.
Add the eggs to the asparagus and fry until done. Turn the omelette over using a pan lid to avoid breaking.
After 5 minutes the omelette is cooked and ready to eat. Enjoy your meal.
